Physico-chemical analyses of Turkish honey samples: The assessment of quality of branded honeys available in the supermarkets and unbranded honeys from beekeepers

dc.description.abstractNowadays because of the negative media news and publication about unfamiliar branded honeys sold in supermarkets, consumers are uneasy and distrust with honey. Determination of the chemical characteristics of the honey is a major issue concerning the protection of public health and consumer rights. So the aim of present study is to evaluate and compare the physico-chemical properties of branded and unbranded honey samples randomly obtained from retail supermarkets and beekeepers. The contents of moisture, acidity, sucrose, invert sugar, conductivity, diastase and hydroxymethylfurfural value of honey samples were determined. It was found that the means of moisture, free acidity, sucrose, conductivity and diastase in all honey samples turned out to be in line with the honey standards of TSE, CODEX and EU. But invert sugar rate of branded chestnut honeys in supermarkets were slightly lower than standards of TSE, CODEX and EU. Furthermore HMF levels of flower and chestnut honey samples sold in supermarkets (44.0±2.3 and 53.1±2.0 mg kg-1) were higher than those of honey samples obtained from beekeepers (8.2±3.1 and 5.3±1.7 mg kg-1). It may be because of the long storage conditions or reheating repeatedly. The results of present study showed that honey samples studied were commonly at good quality. Furthermore these results may effect on consumer preferences and industry.en_US
